Herbert L. Parsons Jr., lovingly known as Herbie, passed away peacefully on February 15, 2026, at the age of 75.
Herb was born on September 29, 1950, in Dallas, Texas, to Herbert Parsons Sr. and Edna Parsons. He was raised in Texas alongside his sister Shirley Mayes and brother Danny Parsons, growing up surrounded by a large and close-knit Texas family that he spoke of often and cherished deeply. Herb fondly recalled the influence and love of Mama Loyes, Daddy Bob, Aunt Jo, Uncle Warren, and cousins, including Jody, Peggy, Dean, Pat, and Mike Seay.
Herb was many things, a son, brother, husband, father, grandfather, friend and a Proud Texan. His love of motorcycles came early in his life, one that he enjoyed for the remainder of it. He was a talented photographer, gardener and fisherman. He was an animal lover, an avid RC Modeler. Herb was a BBQ Pit Boss, Tall Tale Teller and a Jack of all Trades.
In his teenage years, Herb moved with his family to Virginia. It was there that he built much of his life, marrying and raising his own family. Among his proudest accomplishments was owning and operating Herby’s Get It and Go Food Store and Deli in Grottoes, Virginia. For 20 years, Herb ran not just a business, but a community gathering place where friendships were formed and neighbors became family. The Parsons family was welcomed with open arms, and Herb returned that warmth through his generosity, hard work, and genuine connection to the community.
Eventually, Herb made his way back to the place that he always called home, Texas. It was there that he married and found a new career working at UT Southwestern. He looked forward to going to work to see his students every day. He lived the rest of his life in the place he loved, with his devoted wife and family.
Above all, Herb was a family man. He is survived by his beloved spouse, Qiuyan Li; his children, Jenny Parsons Gregg, Elizabeth Parsons Agraz, Herbert Parsons III, and Li Jin; his cherished grandchildren, Kelsey, Brandon, Justin, Kaitlyn, Cole, Audriana, and Xavier; and his great-grandchild, Camryn. He also leaves behind his sister, Shirley Mayes; brother, Danny Parsons; nephew, Bo Sessums; and niece, Laura Sessums Delaney; and many extended family members and friends who will miss him dearly.
Herb will be remembered for his warmth, his laughter, his stories, and the steady presence he brought into the lives of those who knew him. His legacy lives on through the family he loved and the countless memories he created.
A Celebration of Life gathering will be held on April 11, 2026, at 11:00 a.m. at Shirley Mayes’ home in Arlington, Texas.
For those who wish to send condolences, they may be sent to his daughter: Jenny Gregg 7409 Wapiti Ct. Charlotte, NC 28273
As an avid animal lover, Herb would prefer donations in lieu of flowers. Contributions may be made to the SPCA of Texas
Herb’s spirit, stories, and love will remain forever in the hearts of those who were fortunate enough to know him.
